Kids Breakfast: Oat Pancakes

This was submitted by Charlotte, a busy mom in France. She got this recipe from one of her mom friends and it has become one of her family favorites. It’s a nutritious twist on the traditional pancakes that most kids (and moms) love. Thanks Charlotte!

For Batter – Mix in Blender:
4 egg whites
1/2 cup Quick Cook Oats (not instant)
3/4 cup cottage cheese
1 tsp vanilla extract
1 tsp cinnamon

If the batter is too thick, you can add just a little water to thin it out. Then cook them in a pan just like regular pancakes – about a minute per side and voila!

My daughter likes them plain or with just a little honey drizzled on top. Of course you can use syrup too!

Love these! Make them for my kids a couple of times a week and they gobble them up!!
