I love cooking with eggs. They are easy, satisfying and nutritious. Eggs contain high quality protein and 13 essential nutrients (in varying amounts) including choline and riboflavin.

During the week I make scrambled and hard boiled eggs but I like something different on the weekend. Last weekend I got picture happy making fried egg sandwiches. So I just had to share.

I choose eggs that contain DHA. Trader Joes’ omega-3 eggs contain 75mg DHA per egg (for more on DHA see this article).

I spray a nonstick pan with canola spray. If I’m making sandwiches for everyone I make three at a time.

While the eggs are cooking I put the english muffins in the toaster oven. I use Orowheat 100% whole grain.

Once the eggs are formed I flip them over half way and keep turning them over until the yolk is cooked through. Once done, I turn off the stove and add the cheddar cheese slices.

Then I butter the english muffins. For everyday spreads like this I use Brummel and Brown (yogurt butter).

By now the cheese has melted so I put the sandwich together. I serve with apple slices.

I’m curious. Am I the only one making fried egg sandwiches?

Nope – not the only one! We love them in our house…and I add a very, very thinly sliced tomato to mine. Yum!

We love fried egg sandwiches as well. My favorite way to eat them is on very un-nutritious white bread with mayo but I mostly make them the way you described above.

I LOVE fried egg sandwhiches, and so does my 3 year old daughter. I could eat one every day!!! I like to fry a little lunch meat and add to it if I have some too!

We make them too! But ours are open-faced and we eat them with a fork (cut up like French toast). I put a slice of American cheese on a piece of whole-grain bread. Then pop it into the toaster oven to melt the cheese and add the fried egg on top. Yummy! I may have to add both of these ideas to my Breakfast Challenge when I update it!

Love them! But I use an egg ring and pour the eggs into this. When it is done on one side then I flip it. It makes a perfectly round egg for the english muffin!

I’m with Michelle on this – fried egg, mayo, and squishy white bread. Now Maryann, it must be the kid in me but looking at the photo, the sandwich looks like Pacman eating two yellow thingies with googlie eyes. Chomp. Chomp. Chomp.

I make these, but I cook the muffins on the griddle. I also bought a griddle just so I could make more than one at a time! I call them “McMommy” sandwiches. Like Burger King’s new muffin breakfast sandwich, it’s not very original, but really good! I use Morning Star Sausage Patties. Yummy!

We love egg sandwiches at our house! My fave way to fix them is to toast a slice of wheat bread or a seeded hamburger bun, slap a slice of Velveeta cheese on the warm bread, then put a fried egg (yolk still runny!) on top of that, and top off with crispy bacon or fried ham. My sweetie will eat TWO of these while I’m still fixing my own!

It’s so funny because I stumbled into your post just tonight after eating an almost exact replica of your fried egg sandwiches. I have been a fan of them since forever, the only difference is that I use the butter to fry the egg instead of spreading it on the muffin, and that I use manchego cheese instead of cheddar. I do sometimes add a slice of ham and its a perfect little breakfast or dinner. I love eggs for dinner, that’s just me.

We’re huge fried egg fans at my house – especially the omega-3 eggs. I like adding a slice of low fat American or mozzarella cheese, and I typically serve it on a whole grain English muffin. For me, a few slices of avocado are perfect.

I usually have an open egg sandwich. Sourdough is the best, but I rarely have that around. When I have avocado, I spread that on the bread instead of butter to cut down on my butter intake. I also enjoy putting a tomato on it. The ideas about putting the cheese on the bread is genius! It bugs me how the melted cheese sticks to the top of my mouth.

One Trader Joe’s whole grain muffin. One scrambled egg in an egg ring. And one big layer of smoked salmon. My 9-year-old’s new favorite lunch. Just add a carrot and some grapes.

I am sitting eating a fried egg sandwich right now which is what inspired me to google them!!!Try frying it with a small amount of sliced onion too.It goes illuminous green on the egg white but tastes great.Then just a pinch of salt and black pepper and enjoy!
